A Few Simple Recipes
Hello All! Phew. What a crazy few weeks. I am not even going to talk about YOU-KNOW-WHAT because you have endless chatter about THAT on all the news feeds and social media. So instead how about we do a little chat around food- food that heals and supports you and your immune system.
Over the past few weeks there have been many client inquiries about how and what to cook and make. Real, healthy food does not and should not be complicated. It is simple and straightforward and uses great ingredients. Following are a few salads that are part of my weekly food prep routine. Add some legumes, an egg, a side of chicken or fish, and you've got a great meal. Add some kale or greens while you are at it:) to get some calcium and more fiber and phytonutrients.
Have a stellar week and stay healthy and happy. Yes, there are gonna be some amazing and awful moments all smooshed into this blob of time that we've got going on lately but it's going to pass. For real. Pinky swear.
Beet Salad
4 boiled beets cut into cubes
1 bunch of chopped parsley
Chopped red onion or shallot
1 chopped scallion
Add olive oil, salt, and pepper to taste
Fennel Salad
2 bulbs of fennel sliced
1 bunch of finely chopped dill
Juice of ½ a lemon
Olive oil, Salt and pepper to taste
Eggplant salad
Sliced eggplant- bake in the oven after coating with olive oil and sprinkling with salt.
After baked- add 1 bunch of chopped coriander, 1 spicy green small pepper, ½ of one lemon (just juice.)
Quinoa Salad
1 cup of cooked quinoa
1 bunch of chopped dill
2 cloves of minced garlic
Juice of ½ a lemon
Olive oil, salt, pepper to taste.
Tomato Basil Salad
2 firm, large tomatoes, chopped
1 bunch of fresh basil
1 shallot chopped
Olive oil, salt, pepper to taste
